Good and bad carbs
The Montignac Method gave all foods a value: the glycemic index. The higher the glycemic index, the bigger the effect on blood sugar levels and the worse functioning of the pancreas is. Therefore, products with a glycemic index over 50 are called bad carbohydrates. They cannot be eaten in Phase 1 and exceptionally in Phase 2.
Products with a glycemic index under 50 are good carbs.

Good and bad seasonings
Those who want to lose weight, have to keep their hands of a number of products. In the Montignac Method a lot is allowed, but especially in Phase 1 some seasonings prohibited.

- mayonnaise with Sugar
- béchamel sauce
- flour sauce
- sugar

- palm oil
- paraffin oil
- mustard (modestly allowed in Phase 2)
